At Emilie's French Teas we are making brunch this Mother's Day
with our family and friends, here are a few of the
fresh and spring like tastes we are sampling!
Our Mother's Day table is crowned with our Nuit D'été infused whipped cream. Made with your choice of dairy or coconut cream, this treat is flavored with Nuit D'été, a beautiful fruit and flower tisane from Dammann Frères. The sweet and tart flavors of rose, apple, and hibiscus top fresh spring berries as a perfect complement this Mother's Day weekend.

Emilie's French Teas has created a treat just in time for Mother's Day! Using our Nuit D'été, a fruit and flower tisane of apple, hibiscus, and rose by Frères, we have created a light and refreshing berry dish to accompany our beautiful French Mother's Day Brunch!
Nuit D'été Whipped Cream and Berries
1 cup Heavy Whipping Cream Or Coconut Cream (Coconut Cream will not form stiff peaks)
2 Tbsp Nuit D'été by Dammann Frères
1 to 3 tsp brewed Nuit D'été, chilled
1/4 cup powdered sugar
1 to 2 pounds fresh berries such as Strawberries, Blackberries, Blueberries and/or Raspberries.
In a heavy saucepan warm Whipping Cream or Coconut Cream to a simmer.
Remove Pan from Heat. Add 2 Tablespoons Nuit D'été tisane to pan, cover, and allow to steep in refrigerator overnight.
Strain cream and discard the fruit and flower tisane.
Once cold, add cream to a chilled bowl. Using a stand mixer with whisk attachment, electric mixer, or whisk (this will take considerably longer).
Once soft peaks begin to form begin to gradually add chilled Nuit D'été, it is easiest to do this by drizzling it down the side of the bowl while continuing to mix.
When you see stiff peaks form, gradually begin to add powdered sugar. Sweeten to taste.
Top berry blend with Whipped Cream. Serve Cold. Cream will deflate if allowed to warm, serve as quickly after whipping as possible. Leftovers may be stored in airtight container in refrigerator for 1 to 2 days.
